A
new addition to the St. Augustine dining scene is Collage Restaurant.
In the location of the former La Parisienne restaurant, Mike
Hyatt and Cindy Stangby have transformed this quaint French restaurant
into a world class dining establishment. After taking over the restaurant in September of 2006, they
have upgraded the menu by including dishes from all over the world.
In February of 2007 it was time to make the name change to
Collage – artful global dining. The menu has an eclectic flavor with emphasis on fresh
local seafood, steaks and much more.
You never know what country will be represented but you can be
assured that the ingredients are fresh and well prepared.
So if you are in the mood for something new and different, stop
in and let their professional staff treat you to a meal that is out of
this world or at least from a small part of it.
